The ripe tannins and refreshing character of this wine support great aging potential. A wine ideal to pair with smoked salami and game dishes, rack of lamb with herbs, roast beef, veal, pork and chicken.
At Villa Raiano, much emphasis is placed on the combination of grape and microclimate. The microclimate present is ideal. The shelter of the mountains makes it warm early in spring. Getting a little higher up the slopes creates a big difference between day and night temperatures, ideal for grape development. On the higher vineyards the white grape varieties are planted, such as the Fiano di Avellino and the Greco di Tufo. In the lower vineyards grow the blue grapes such as the Aglianico, the basis of the famous Taurasi wine." The modern cellar, built in 2009, is partially underground. The grapes come in upstairs and are pressed there. Then they go down one floor for fermentation. Finally, they enter the bottling line deep underground. That way we never have to pump the wine over mechanically. And that makes for real quality gains." The wines are in conversion to organic viticulture as of the 2018 harvest
