Picpoul de Pinette is a fine wine. Beautiful ripe fruit, fine acidity and a slight saltiness fill the mouth. This wine has aromas of citrus combined with floral notes in the nose. It is fresh, lively and thirst-quenching on the palate. Most Picpouls de Pinet are bottled in December/January, after fermentation and settling alone. However, it is at this point where Villa des Croix differs from the rest. The Villa des Croix is also aged on its lees for a minimum of 4 months to add structure, body and complexity, without compromising the expected fruity and delicious character of a Picpoul de Pinet.
The "terroir" of the AOC Picpoul de Pinet terroir is located around the Bassin de Thau, a huge saltwater inland lake. The roots of the vines here are almost truly in the Mediterranean, which you can certainly taste in the wine. Because the vineyards are close to the coast, the soil here consists mainly of limestone derived from the fossils of shellfish. This combined with the exuberant sunshine gives beautiful ripe fruit with fine acidity and a slight saltiness. The Bassin Thau is a natural breeding ground for delicious oysters and mussels, making it a good friend at the table with Picpoul de Pinet.
