Oriol Rossell Cava Brut Cuvee Especial Bio 2021

In color, this Cava Brut Cuvee Especial is glossy straw yellow with brilliant green reflections. In the glass, there is a fine lingering bubble. In the nose, it is fragrant with white fruit aromas with some light syrup notes. In the beginning it is fresh with good acidity. Then it is balanced , creamy and fruity with a long finish.
What makes this Cava special is the use of old vines with deep roots that bring out a lot of flavor. They give this Cava body and depth. The grapes are sourced from Cal Cassanyes, the domain's only vineyard located 150m above sea level. The terroir here is poor with some chalky and sandy loam. This vineyard is grown organically. Fermentation takes place at low temperature to preserve the aromas of the grapes. The grapes are carefully assembled to produce a fresh, balanced wine. The wine matures for a minimum of 12 months in bottle.
  • About Oriol Rossell

    The Oriol Rossell estate is located in a protected area of the Alt Peneds. The origins of the domain date back to the late 16th century, evidenced by references to the names Cassanyes and Rossell, found in family documents of the time. The two families came together in 1811 through the marriage of Damia Rossell to Madrona Cassanyes, heiress to the family estate. The tradition continued from father to son and led to the creation of "Oriol Rossell. The family has been making cava for 30 years. All this time they have strived to uphold time-honored traditions and offer the best quality wines. The company has limited production and, unlike many of its peers, prefers manual to machine production.

    Harvesting is also done by hand in the cool of the early morning. This allows an initial selection of grapes to be carried out in the vineyard at Oriol Rossell. The grapes are transported in small 20-kg crates so as not to damage the fruit. Because they arrive at the winery whole, they retain all their characteristics. From generation to generation, they oversee careful handling of the vineyards and winemaking. Organic cultivation in the vineyard, slow and well-controlled fermentation in the cellar and finding the right grape composition are the examples.
