Matsu La Jefa 2020

La Jefa has a straw yellow color. The aroma is very complex, in which notes of vanilla and ripe stone fruit stand out first. These aromas are complemented by hints of anise and harmonized by oak barrel aging.It is eand mouth-filling, silky wine, wonderfully creamy and very pleasant. At the same time, it has good acidity, resulting in a very balanced and elegant wine. Very soft in the mouth, this increases its complexity and richness.
La Jefa is made from Malvasía. There are almost no vineyards where this white grape predominates in DO Toro. Therefore, La Jefa comes from a selection of a large number of white vines found alternately in old red grape vineyards (from 50 to 150 years old). The vines nestle in sandy soils with high granitic stony soils and are grown naturally according to tradition. Harvesting began on Sept. 24 and was carried out manually. Minimal intervention is used in winemaking. Spontaneous fermentation with indigenous yeasts takes place in new 600-liter French oak barrels, where it remains in contact with the lees.
Aging: 14 months in new 600L French oak "bocoyes" (large barrels), lightly toasted.

    Driven by the desire to make wine without haste, Raul Acha searched for the best vineyard in the Toro area. Matsu, which means "patient balance" in Japanese, perfectly describes the essence of this project. Matsu is inspired by the Japanese tradition of nurturing nature, purity, simplicity and the absence of artificial intervention.

    It pays homage to the Spanish wine tradition. All wines are made from grapes grown in a completely natural environment. The Matsu trilogy of wines represents three generations of winemakers. More than a winery or a wine, Matsu is a modern project of high quality winemaking that produces exclusive wines. Matsu refers to the connection between the Eastern drive for perfection and the most advanced biodynamic techniques of the Western world, with which the winemakers created this ecological wine. Matsu represents the essence of a natural wine, without any use of synthetic or chemical products.
