Dominique Cornin Pouilly Fuissé 'les Plessys' Bio 2019

The Plessys! Bearing a name reminiscent of that of a rich provincial region, this Pouilly-Fuissé offers a comparison. Comfortable on the palate with a voluminous palette, enhanced by wonderful aromas of ripe peach and toasted pineapple. Blessed with a long finish, as does its mineral finish, giving it a first-rate balance. Cutting to face the trickiest of taste buds without straining a muscle. The Plessys? Undoubtedly one of the finest representatives of an appellation with quiet power.
Fermentation: 50% semis (600 liters) and 50% bourguignonnes (228 liters) for 12 months. additional aging for 12 months in stainless steel vats on fine lees.
  • About Dominique Cornin

Domaine Dominique Cornin is a small domain in Mâcon and has long been owned by father Dominique and son Romain Cornin. Together they manage their 10 hectares of vineyards around the village of Chaintré in the southernmost point of the Mâconnais, where it joins the Beaujolais.

In 1998 they stopped using chemical pesticides. After being successful with an experiment, they switched completely to organic and biodynamic viticulture in 2003. There should be, according to their method, a natural microbiological balance in the soil. Because of this method, their wines offer a very great diversity and their different terroirs are beautifully expressed.

They also use during vinification only natural yeasts naturally present on the grape, instead of the often used industrial ones. This gives the different vineyards all their typical signature and makes them very distinct in character.
