Château Mignan l'Oeil du Temps Bio 2012

Cuvée Oeil du Temps is almost black in color with ruby reflections. The wine has a beautiful, complex nose with aromas of hawthorn, licorice, black currant and black fruit balanced with notes of aging. The ample, concentrated and silky mouth offers nice fruity substance. It is refined and concentrated with supple tannins, minerals and has strong intensity leading to a nice long finish.
The grapes are harvested manually, after which the grapes go onto the sorting table and are totally destemmed. Fermentation takes place in wooden barrels for 4 weeks. The wine then matures further in 1 and 2 year old oak barrels. The wine is bottled manually.
  • About Château Mignan

    On the high terraces of the Minervois La Livinière, Château Mignan is located in a small and typical southern French village called Siran, in the heart of Languedoc. These exceptional Languedoc wines reflect the terroir, consisting of calcareous clay and give the wines an incomparable quality. La Livinière is considered the best sub-region in Minervois.

    Christian & Carole Mignan and their three children have passionately managed this Languedoc château for many years. Château Mignan consists of 12 hectares of vineyard with 7 hectares in Minervois La Livinière and 5 hectares in Minervois. As mentioned, the wines produced here reflect the terroir of the vines. Only great grape varieties are used: syrah, grenache and carignan for the reds and marsanne, roussanne, grenache blanc and rolle are used for the whites.
