Bodegas Williams & Humbert Dos Cortados Solera Especial 20 Años

Dos Cortados Solera Especial is sharp, intense and complex in the nose, with subtle notes of hazelnuts and dried fruit. Dry, with fresh acidity. It has a full and elegant taste with a nice length that ends in an incredibly expressive and unforgettable finish. This is a sherry with an amontillado nose and an oloroso taste.

This sherry is made from grapes from the best vineyards. The wine goes into Criaderas y Soleras system in fino-sherry casks for organic aging. Occasionally, circumstances cause the contents of some barrels to behave differently than hoped - these will never become fino sherry. These barrels are "cut" (hence the term "cortado") and will form the basis of the palo cortado solera system. The wine then matures for 20 years until it reaches the solera.

    Don Zoilo was just about the most ultimate you could buy in Sherry in the 1970s. In 1877, the company was founded by Sir Alexander Williams and his brother-in-law Arthur Humbert. Williams & Humbert was born. Many of the original 'soleras are still in use today. In the early 1900s, the company was taken over by the then already famous José Medina family. Under the energetic leadership of the four brothers, José, Nicolas, Jesús and Angel, José Medina y Compañia became a global player in the Sherry world, using Williams & Humbert as their trade name to this day.

    In the Sherry world, it is unique to carry vintage Sherry and organic is even more rare. Williams & Humbert is the region's pioneer on both counts. There are vintage Sherries dating back to the 1920s. It is considered the oldest and most complete "library" of old vintages in the entire area. Legislators use these stick-aged wines as references for other old wines in the area. In addition to these super rare wines, there is also organic production. One first launched an organic Vintage Fino from 100% organically grown palomino grapes. To fortify this wine one uses organic alcohol. This project is in the hands of winemaker Paola Medina (1978). She has worked at Williams & Humbert since 2010 and has been technical director since 2012. She holds a degree in chemistry plus a masters in viticulture and winemaking from the universities of Cadiz and Madrid.
