Brigaldara Amarone della Valpolicella 'Cavolo' 2017

The color of Amarone 'Cavolo' is deep garnet red. It has aromas of fruit jam, amarene cherries and vanilla combined with hints of dried grapes and spicy notes. It is a wine with great structure. Complex, elegant and velvety.

In the Cavolo vineyard, the corvinone grape variety is common. The soil is poor and stony, yet perfect for growing the vine, which offers limited production per plant and is characterized by strong roots that dig deep in search of those mineral microelements that give flavor and structure to the wine. The selected bunches are the thinnest and best exposed. After harvesting, they are dried for about 120 days, after which vinification takes place. Here, all the noble components held in the skins are transferred to the wine. Amarone Cavolo ages 2 years in small oak barrels and then 2 more years in large oak barrels.

    A thousand years of history, 120 acres of land - 47 of which are planted with vines - spread across three different areas of Verona: Valpolicella Classico, Valpantena and Eastern Valpolicella. The Cesari family has owned the villa and surrounding land, planted with vines, olive trees, orchards and grain, among other things, since 1928.

    According to Brigaldara, vineyard management is central. Here, most of the work is done manually by a team of agronomists, who work shoulder to shoulder with oenologists and management. Every decision is made taking into account the importance of preserving biodiversity and respecting the vegetative-productive balance of each ecosystem. Other important elements are the ripening process of the grapes and the individual needs of each vineyard. Rapid interventions, precise operations and a drastic reduction of treatments in the vineyard guarantee a long-term sustainable vision for the vineyards. Incidentally, pesticides and synthetic products are banned in this vineyard in favor of responsible use of sulfur, copper and pelleted manure.

    Stefano Cesari and his wife Maria Gilla are assisted by their sons: Lamberto and Antonio, ensuring the future of this excellent winery. Approved by Equilitas 3E sustainability label.

    (The Cavolo vineyard is located in a small valley in the municipality of Grezzana, in Valpantena, at 130 meters above sea level, surrounded by nearly two hectares of olive groves. See photo below).
