For the de-alcoholization of sparkling wine the different boiling points of alcohol and other liquids are used. Alcohol evaporates already at 78 degrees Celsius, while, for example, water only becomes gaseous at 100 degrees Celsius. The problem with this method, however, the loss of taste in such a strong heating - many ingredients that provide the wine for the full, round taste experience, thereby destroyed.
Therefore, we take advantage of the fact that the boiling point of liquids in vacuum is significantly lower: depending on the level of vacuum for alcohol at around 30 degrees Celsius and for water at around 40-50 degrees Celsius. Therefore, we heat the wine for Little Red Riding Hood alcohol-free only to 30 degrees Celsius, so the typical, fine fruity and full-bodied Little Red Riding Hood taste is retained.
