Giol Merlot Senza Solfiti Bio 2021

Merlot has always been one of the most popular wines around the world because of its roundness and versatility, as the grape variety can be used pure or blended with other wines to enhance their balance. Its ruby red color is not particularly deep, revealing its nature as an easy wine ideal for daily drinking with food. The nose shows very delicate floral notes, which combine nicely with aromas of fresh berry fruit and wild cherries. The well-structured, balanced and slightly tannic palate has an attractive, soft finish.
During fermentation, the yeasts produce sulfites, albeit in much smaller quantities than those added by the oenologist.So even if no additional sulfites are added (by the oenologist), the wine will still contain traces of them.The skill lies in creating conditions, hygiene of the grapes and winery cellars, vinification times and temperatures, selection of low-sulfite yeasts and so on, that lead to the lowest possible formation of sulfite.

    Located in the heart of San Polo di Piave, 35 km from Venice (Veneto), Azienda Agricola Giol is the oldest Prosecco house from Italy (1427). The trademark of this winery is the currently uninhabited Giol Castle. Here in the cellars, under the watchful eye of the young Venetian winemaker Vittorio Carraro, the wines are aged, behind meters thick walls and therefore at a constant temperature.

    The recent history of the castle and wine cellars goes back to the events surrounding 2 families: first the Papadopoli family and later the Giol family. The Count Papadopoli, a Venetian banker, used the castle as his summer residence, leaving Venice during those months to oversee the harvest on his endless estate. In 1923, the family sold the huge estate with more than 60 farms belonging to the estate and the castle to Commander Giovanni Giol. He had just returned from South America after a very successful period of emigration. He moved into the castle and continued the work of the count. Preserving the structure and the old wine cellars, he built a second barrel room, still famous for its size and charm. After the contributions of the next three generations, the entire complex is in excellent condition and what remains is a winery producing great wines. All made from organic grapes, vegan, some without added sulfite and with relatively low alcohol levels.
