Description

Blend: 80% Pinot Noir and 20% Chardonnay from the Hautvillers Premier Cru plot
Harvest: 2014.
Bottled: July 2015, only 1800 bottles.
Aging: French oak barrels.
Dosage: 2gr / l.
Disgorged: August 2018.

Satin soft, deep and intense in color with a background of sparkling light yellow with a lively flow of small bubbles that create a delicate ring of mousse. The seductive appearance of a wine that is both fresh and rich.

On the nose, the first notes of brioche and honeysuckle with cherry, black currant and plum add a touch of fruitiness. Letting the wine breathe for a while releases more umami notes with peppermint, sweet spices and buttercups and garlic-like notes. There's also a hint of cardamom and lime infusion, then notes of Sichuan pepper, peach, nectarine, pineapple, blackberries and other fleshy fruits.

A nice, clean start on the palate with a soft, creamy effervescence followed by a rising sensation of ripe fruit with good acidity reminiscent of pomelo and pineapple and a finesse on the tongue. It has an excellent balance that makes the most of the long, concentrated, robust and sea-breeze finish.

Les Basses Prières 2014 Premier Cru is packed with the freshness and concentration that characterize this remarkable terroir. We recommend that you serve it at a temperature of 10 ° C or slightly above. The options for pairing with this Champagne with food are almost limitless, but here are a few that will capture the imagination:

- Caviar

- Fillet of lemon sole with sweet potatoes in cardamom cream
- Lightly cooked pollock fillet with endive in citrus dressing
- Beef tartare for example
- Jambon de Reims
