A kaleidoscope of deep yellow and green with dazzling flashes of paler green plus a vibrant stream of tiny bubbles that form a delicate mousse ring. All signs of a fresh and versatile wine this Premier Cru Blanc de Blancs.
The first impression on the nose is of flint, star anise and breadcrumbs with hints of lemon and fresh hazelnuts. As the wine breathes, we discover notes of licorice peach and grapefruit with lemon zest, cashews, black currant buds and the scent of acacia and roses.
On the palate, there is an instant sense of smoothness and freshness with a soft, creamy fizz, followed by a round fruitiness supported by a tight acidity of lemon zest. The middle palette is round with a clay and flint-like minerality, some fruitiness and body, a certain bitterness and aromas of humus and flint. Generally a wine with a great richness that extends to a long, spicy and straight aftertaste.
Clos des Trois Clochers 2014 still has a youthful character: straight and pure with a wealth of concentrated aromas that indicate a wine that evolves into something truly exceptional and deep. We recommend to serve it at 10 ° C or slightly above. The options for matching dishes are endless, but here are just a few suggestions:
- Sushi and Sashimi
- Marinated salmon in Alpine herbs
- Oysters in champagne stock
- Grilled red mullet and salted cod fillet and vegetables with grilled parmesan
- Aumonières of salmon, seashells and shrimps in a leek sauce
- Fillet of wild sea bass with candied fennel, buttered spinach and cream flavored with juniper berries
- Beef carpaccio with parmesan curls and arugula Pesto
- Veal carpaccio with coriander oil and sprinkled with old balsamic vinegar
|Match with||Almost endless dishes, for example oysters, sushi and sashimi, but also with salmon, lobster and beef and veal. (See also the text above)|
|Profile||Smooth, fresh and soft creamy. Round and fruity with a fine acidity and light barrel maturation.|
