The Cuvée Pervenche consists of a blend of Merlot 50%, Cabernet Franc 45% and Cabernet Sauvignon 5%. The nose is powerful with notes of fresh red fruits and intense plums. As soon as the wine opens, delicate aromas of flowers bloom. On the palate, the wine gives a great freshness of fruit, peppers and juicy tannins. In order to maintain the freshness and juiciness of the fruit, the vinification is carried out by cold pre-fermentation maceration of the whole berries under inert gas. The maturation of about six months takes place 75% in cement barrels and 25% in Tuscan terracotta pots.
The terroir is distinctive, 80% of the estate is on a plateau, characterized by a thin layer of the hardest type of limestone known locally as calcaire à astéries. This limestone species takes its name from the countless fossils of Asteria, an organism related to starfish, hence the star on the labels of the wines of Puy Arnaud. The remaining 20% is on the slopes below the plateau. The vineyards are located at an altitude between 75 and 100 meters with a remarkable microclimate, which gives very good ventilation and with a lot of sunlight.
