This Cava Brut Nature Reserva is fresh and light on the palate. It has aromas of white petals and ripe fruit with a preponderance of grapefruit. It has an excellent acidity that gives a soft freshness and fills the mouth with every sip. The fine and elegant bubbles glide tinkling over the palette like a starfish.
What makes this Cava special is that it uses old vines with deep-set roots that bring out a lot of flavor. They give this Cava body and depth. The grapes come from Cal Cassanyes, the domain's only vineyard at 150m above sea level. The terroir here is poor with some chalky and sandy loam. This vineyard is grown organically. Harvesting is done by hand with the grapes in crates of 20 kg. Then the grapes are selected on a sorting table. Fermentation takes place at a low temperature to preserve the aromas of the grapes. The wine is aged in barrels for 3 months and then bottled for 20 months.
