Cuvée Le Part du Diable, the share of the Devil, has an almost black color with beautiful purple sparkles. The fragrance has a deep scent with extremely elegant tannins. Black currants, morello cherry and complemented by garrigue fill the mouth which is full and generous. A wine of great distinction. For your best meals, reserve Hare à la royale, roasted wild boar, tarte tatin with fried foie gras, tournedos Rossini or, for example, a veal osso bucco.
The vines face south, in contour lines, planted on schist soils. Summers are very dry with annual rainfall rarely exceeding 700mm per year, usually concentrated between November and April. The predominant wind comes from the north. The grapes for this wine are picked by hand. The best Grenache, Syrah, Mourvèdre and Carignan grapes are selected with the utmost care and precision. Micro-vinification takes place in open barrels of 600 liters. Part of the wine is aged in tapering oak barrels.
